But what do you smell? And why is it so stimulating?

From a physiological point of view, the answer is simple. The process of smelling is closely linked to emotions and associative learning. And unlike our other senses, it is directly connected to the limbic system; even before you recognize an odor, the olfactory bulb has already triggered a memory and the associated feeling, a real primal reaction.
